Keeping eggs fresh without refrigeration

I know that it sounds crazy, but it is possible to keep eggs fresh for at least a month without the aid of refrigeration, but there is a catch. The catch is you cannot take the eggs that you buy at one of the local W’s and leave them out on the counter without spoiling. It isn’t something that you have to do to the eggs; rather it is what you don’t do.

When I tell you what not to do, you WILL cringe, but hear me out; you do not wash the eggs until right before using them! I know it sounds loony but what difference does it make when they are washed, just as long as they are washed before cracking them open?

What happens is when an egg travels through the hen, the last thing that happens before being deposited either onto the conveyor belt or better yet into a nest, is the egg is coated with a thin protein coating that keeps all bacteria and dust from entering egg through the pores on the egg shell, or aka, the bloom.

Factory chicken farms wash their eggs, which takes the bloom out of the picture leaving the egg vulnerable to dust and dangerous bacteria. It makes sense if you think about it; if an egg spoiled before the hen was able to successfully hatch it, there would be only one way to hatch an egg and that would be with the aid of an incubator which is very recent technology, considering how long the chicken have walked the earth.

Since Europe’s food police aren’t quite as aggressive as ours, most countries over there do not refrigerate their eggs. The only hope that we have here to get unwashed eggs is to go to your local farmers market and request such, or to raise your own chickens which to me is, the more rewarding of the 2 options. Call me crazy.

If you follow this method you won’t get the opportunity to count, re-count, and count again the number of floor tiles that your bathroom has during your first, second, and third session in there, if you know what I mean…
